Hey Friends,
This is the post-it note I've got on my kitchen cabinet right now. It helps me to be strong...it says that God is our Light. Sometimes, life can seem dark, but God is our Light. I hope this promise is one you will hold onto.

If you want to make your weekday mornings smoother, try this breakfast casserole. You make it the night before, so mornings are easy:
FRENCH TOAST CASSEROLE
4 Tbs. softened butter
1 loaf white bread
8 eggs
3 cups milk or half and half
¾ cup brown sugar, divided
1 Tbs. vanilla
1 tsp. cinnamon
¾ tsp. salt, divided
½ tsp. nutmeg
¼ cup flour
Pre-heat oven to 350 degrees. Coat a 9 x 13 inch pan with butter. Tear the bread in 1-inch pieces and lay the pieces in the prepared pan. In a large bowl, whisk the eggs, milk, ½ cup brown sugar, vanilla, cinnamon, ½ tsp. salt and nutmeg until smooth. Pour egg mixture evenly over the bread and pat it down. (can refrigerate overnight at this point).
In a separate bowl, make crumb topping: Combine ¼ cup flour, ¼ cup brown sugar, ¼ teaspoon nutmeg, ¼ tsp. salt, and the softened butter. Make crumbs with it, using your hands. Sprinkle the crumb mixture over the casserole. Bake 45 minutes. Let cool about 15 minutes before serving. Serve warm, with syrup.
